Sweet Potato and Chickpea Curry

 

Ingredients

2 sweet potatoes

¼ cauliflower

1 large onion

1 pepper – any colour

(or any veg you fancy really)

1 can chickpeas

2 tablespoons curry paste

1 can tomatoes or jar of passata
 

Method

1.    Peel and chop the onion

2.    Deseed and chop the pepper

3.    Break the cauliflower into small (fork size) pieces

4.    Cut the sweet potato into cubes (you can peel it if you wish)

5.    Use a wok or frying pan and heat the curry paste, sometimes you need to add a little water so that it doesn’t dry out

6.    Add the vegetables and stir into the paste

7.    Add the tomatoes and a little water if necessary and allow to simmer for about 20 minutes until everything is softened

8.    Drain and rinse the chickpeas and add them to the curry
